Roasted Red Grapes and  Blue Cheese Salad

Grapes are one of those fruits that are perfect just as they are. But they’re also rather magical when they’re roasted for about 15 minutes. Not only will this salad steal the spotlight, it’ll win over your heart — literally! Grapes contain polyphenols that promote cardiovascular health.

INGREDIENTS

SERVES 4

  • 2 cups Red Seedless Table Grapes
  • 3 tbsp Olive Oil, Extra Virgin
  • 1/4 tsp Sea Salt
  • 5盎司婴儿芝麻菜、新鲜
  • 1/2 medium red onion
  • 2 tbsp Lemon Juice
  • 1/4 tsp Ground Black Pepper
  • 3 tbsp Crumbled Blue Cheese
  • 3 tbsp Pine Nuts

DIRECTIONS

1 Preheat the oven to 425°F.
2 Add the grapes to a medium bowl. Sprinkle with 1 tablespoon of the olive oil and the salt and toss to fully coat. Arrange on a rimmed baking sheet and roast until the grapes begin to split and are desired brownness, about 12 to 15 minutes.
3 Meanwhile, in a large bowl, toss together the arugula, onion, lemon juice, remaining 2 tablespoons olive oil, and the pepper.
4 Arrange dressed arugula onto salad plates or bowls. Top with the freshly-roasted grapes, sprinkle with the blue cheese (or goat cheese) and pine nuts, and serve while grapes are warm.
